Choc Chunk Coconut Chia Bars

These bars are great for anyone watching their carbs. The chocolate and banana add a just hint of sweetness without the sugar overload. I like using 90% Cocoa Dark Chocolate ( Lindt 90% Dark Supreme is my personal favourite ) or for even lower carbs, a sugar-free chocolate bar.
Ingredients:
1 Ripe Banana
½ cup sunflower seeds
½ cup or either 90% Dark Chocolate or Low Carb Chocolate, chopped into chunks*
1 tsp ground cinnamon
½ cup white Chia seeds
½ cup dessicated coconut
2 tsp coconut oil, melted
*Use Vegan or Vegetarian plant based chocolate for these options

Method:
Line a 16cm by 24cm slice tin with baking paper.
Preheat the oven to 120°C.
Process the banana in a food processor, until mashed.
Put the rest of the ingredients into the food processor, and pulse until the mixture clumps.
Press the mixture into the slice tin.
Bake for 1 hour.
Cool in the tin.
Cut into bars once cooled.
