Chocolate, Date and Almond Balls

Ingredients:
1 ½ cups (250g) natural almonds (Activated or blanched almonds are best)
1 ½ cups (220g) pitted dates
4 tbsp (30g) cocoa powder. Cacao powder can be used if preferred. Monitor how much water you add to achieve the right consistency.
2 - 4 tbsp (1 tbsp = 15 mls) water

Method:
1. Put the dates, almonds, cocoa powder, and 1 tbsp of the water into the food processor. Process until the almonds and dates are broken up into small pieces. Scrape down the sides of the bowl.
(Thermomix : Process for 10 seconds at speed 8. Then scrape down the sides of the bowl.)

2. Add another 1 tbsp of water and process again.
(Thermomix: Process for 10 seconds at speed 8. Then scrape down the sides of the bowl.) The mixture should not be wet, but the mixture should stick together when pressed. If the mixture is too dry, add more water: start with 1 tsp – 1 tbsp and then process again to combine. |
